Recipe: Cowboy Caviar

Sometimes internet trends catch my eye and I have to give them a try! And I’m so glad I went for this one. It’s super customizable, which makes it a great fridge/pantry clear out meal. Here are the ingredients I used to create the viral Cowboy Caviar dip/salsa/salad - whatever it is, it’s f*cking awesome and is now on my summer staples list!

Ingredients:

1 red bell pepper

1 yellow bell pepper

1 orange bell pepper

1 green bell pepper

1 red onion

2 cups quartered cherry tomatoes

1 seeded jalapeno 

1 ripe mango

1 can black beans

1 can pinto beans

2 cups roasted corn

Chopped cilantro

Salt and pepper

Dressing:

Juice of 3 limes

¼ cup olive oil

1 tbsp agave or honey

1 tbsp chili powder

1 ½ tsp cumin

1 tsp salt

1 tsp black pepper

½ tsp paprika

¼ tsp smoked paprika

¼ tsp garlic powder

¼ tsp onion powder

¼ tsp dried oregano


Directions:

Dice all veggies into small pieces and add to a bowl with the remaining ingredients. For the dressing, add all ingredients to a small blender. Or whisk well in a small bowl. Pour over ingredients. Mix well. Tastes even better the next day! Add to salads, bowls, tacos or scoop it onto a corn chip!


Additional ingredient ideas:

1 container feta, cotija, or queso fresco 

1 cup chopped cucumber

Avocado chunks

Chopped peaches

Black olives

¼ tsp cayenne
